Enjoy the authentic New Mexico and Southwestern choices offered by La Rosa Southwestern Dining, a new and rapidly rising Palmer Lake star, offering an exciting culinary experience set along the foothills of the Rockies. “It’s all about the chile,” says co-owner Marina La Riva, whose family heritage of fine Hispanic cooking is reflected in La Rosa’s menu.
If you love Mexican food, take note — La Rosa is simply not more of the same. Whether it’s piping hot caldillo (green chile stew with white beans and fork-tender pork), chicken mole, cumin-rubbed lamb tacos, authentic tres leches cake or one of their icy-cold Mexican beers, La Rosa’s selections are truly a ‘breed apart’ from other area Mexican restaurants.
Set in a lovely historic building, the cantina-style bar features posters of old Mexican cinema classics, while the rustic-elegant dining room offers a mixed-media gallery of local art, including hand-made stained glass panels. La Rosa’s cantina also offers a variety of select and sometimes offbeat tequilas, handpicked by co-owner Mike Elliott, a truly connoisseur experience for the well-educated aficionado. Take their ‘tequila world tour’ and sample tequilas others have only dreamed about. You will also want to try a margarita, perfectly blended with lime and agave.
La Rosa is not to be missed if you live in or are traveling through the Front Range region of Colorado. La Rosa does not accept reservations, so come early for a great seat. 719-368-7676. 25 Highway 105, Palmer Lake, Colorado 80133.
